Sweet Potato Casserole in the Crock Pot – Virtual Thanksgiving


I am so excited!! Thanksgiving is one of my favorite holidays and we’re getting so close! I get to enjoy all my favorite dishes…at once! LOL. Oh yeah, AND I get to see all the beautiful faces that I love so much and don’t get to see nearly enough. The day is a lazy day {after the mad rush to get the food prepped and cooked} – everyone lingering at the table, telling stories, playing games with the kiddos, and cuddling new babies in the family.

Virtual Thanksgiving Dinner

You know how EVERY dish you prepare at Thanksgiving needs oven time?  Yeah, me too. We make squash casserole, turkey, sweet potato casserole, asparagus casserole, dressing, and that doesn’t even begin to consider the desserts. I don’t know about you, but with only one standard oven, my oven is PACKED.  So, I thought it would be awesome if I could figure out how to get some of those dishes OUT of the oven. Enter the Crock pot Sweet Potato Casserole.

WHAT?!  Shut your mouth!  You can cook a casserole in the CROCK POT!  I know girl! That is what I said.  When I first saw the concept I was a bit skeptical; but the end result was FANTASTIC.  In just under 3 hours my sweet potato casserole was done…in the crock pot! I’m still a little shocked myself.  Now, its got my brain spinning and I’m thinking about the other dishes that might be possible to make in the crock pot. That’s for a totally different post.

I think there is one more thing I should point out…this recipe includes {que dramatic music} CEREAL.  I don’t buy it.  I think it is food without nutrition.  I have even written about it {The Truth About Cold Cereal}. Those same opinions I had – I still have ‘em.  But, this is Thanksgiving and my family expects sweet potato casserole. My mama used to make this dish before I was old enough to cook.  She used Rice Krispies or Kellogg’s Corn Flakes. I decided to go with the lesser of evils – I bought Nature’s Path Organic, Gluten Free Corn Flakes “sweetened with fruit juice.” My kids acted like I brought home candy!  They gobbled up the rest of the cereal for breakfast the next morning with lots of raw, whole milk. :) I guess a little cereal won’t hurt ‘em…it could be WAY worse! LOL.
