Sour Cream Chicken Crepes

Mother’s Day is coming up.  What does your family do?  Do you go out to eat, prepare a meal as usual, cook for YOUR mom, or something else?  If you’ll be cooking for someone special like us, your going to love this recipe. It is the perfect girl food! :)   That’s not to say the men in your life won’t love this meal too, but crepes just scream of tea parties and fancy hats…don’t they?

These crepes are so good They are creamy and luxurious… and I can’t even give you enough adjectives to describe how good these are. You’ll just have to try them.  The best part is that they look so gourmet but really these are not difficult at all.  I’ve even got a few tricks up my sleeve to make them come together even faster.  You can grab all the ingredients – affordably-  at your local Walmart – no exotic ingredients here!  Isn’t that great news!

First, make the crepe batter {you can even make this a day ahead and store it in the fridge}.

The second step is making the sour cream chicken filling.  You can cook the chicken a day ahead as well. Shred it up and store it in the fridge until your ready to use it the next day. OR, another quick fix is to use a rotisserie chicken.

I like to fill the crepes with a few spoonfuls of the sour cream chicken mixture and then top with a few spears of sauteed asparagus.  You can get my recipe for the sauteed asparagus here.
