Menu Plan 12.27.10

Well, I know this is extremely late, but let me explain…my laptop crashed!  Did you hear me?!?  My laptop kicked the bucket!  I have been feverishly trying to rescue all my photos from the hard drive thanks to the help of my dad and his wisdom!  Also, I have been doing some shopping around trying to find a replacement.  I finally found one, and so without any more delays… you regularly scheduled programming will resume.

Last week DJ returned to work and it was a fabulous week!  It is so good to return to “normal.”  I also tried my hand as roasting a whole chicken for the very first time and it turned out fabulous!  This will be making it onto my menu plan regularly!  It was so wonderful – #1 because buying a whole bird is much cheaper than buying boneless/skinless breasts.  #2 It provided 3 meals + lunches from one small bird!  First we had it just as it was (which was so delicious I had to stop myself from eating the whole thing!) with roasted carrots and mashed potatoes.  Then, I boned the rest of the meat and placed it in two containers – one for a pasta dish and one for chicken & cornbread dressing.  Both of these other dishes require about a cup to a cup and a half of shredded meat so it is a good way to stretch a little bit of chicken and eat all week!  Besides that, we are trying to cut back on the amount of meat we eat – even if we do have some nearly each night.  Finally, I put all the bones and skin into the crockpot along with all the liquid from roasting the chicken and a little water.  I let it cook all night while we slept and in the morning I got a nice container of delicious roasted chicken broth to use in another dish or soup.  That is a lot of yumminess from one small chicken!

We are going to try to clear out the food we have in the house.  So, we are challenging ourselves to plan and eat meals using all the items in our pantry & freezer.  We are going to try to limit our purchases to just a few items like milk, eggs, butter & bread.  I’ll keep you updated!  So, here’s what we’ve got planned for the week:
