Cranberry Watermelon Roll up Sandwich

It’s time for another lunchbox inspiration!  If you’ve been following along, you know this is #5 of the series that has included, Fruit Salad with Homemade Marshmallow Cream and Cream Cheese Dip, Teriyaki Chicken Watermelon Sushi, Grilled Chicken Sliders with Maple Citrus Watermelon Drizzle, and Build Your Own Lunchable!  All of these lunchbox items have utilized local watermelon.  WHY?  I like to use fresh fruits and veggies when they are at their peak of season locally.  Not only will I get more bang for my buck, but I will get a more nutritious & better tasting product. Besides that, its a cheap source of nutrition for my children – that they LOVE.  A watemelon can feed  3 dozen people…that’s is a lot of servings for a couple of bucks. It contains lycopene, vitamins A, B6 and C.

I hope these lunchbox ideas have been helpful to you so far and have helped you to think outside of the “lunchbox.”  Sandwiches can get boring if you take them day in and day out!

You may have noticed a bit of a pattern in many of my lunchbox ideas: several of them utilize leftovers from a meal I cooked my family for dinner.  This is a favorite way for me to fill a lunchbox!  Not only does it make use of leftovers {so nothing is wasted!} but it also gets something yummy and filling in my husband or son’s lunchbox.  Of course, if you have access to a microwave or toaster oven at work, you can just reheat and eat, but many school children do not have this access.  That means moms and dads need a little outside of the box thinking and some ninja skills at packing at times to keep cool things cool and hot things hot {or warm?}.  That’s why I love to REmake dinner time entrees into lunchbox meals.  Besides, let’s be honest, some of our kids {*ahem*} don’t like to eat the same dish twice in a row anyway.  And, this way…they never have to know!

This week’s lunch inspiration is Cranberry Watermelon Chicken Roll Up Sandwiches and they are made with the leftovers from the meal I shared early this week: Grilled Chicken with Cranberry and Watermelon Chutney.  As I mentioned in that post, my kids could drink this sauce {and they have!} so this sandwich is a no-brainer.
