Labor Day Simple Summer Side Dishes

Ahh…Labor Day. Around here it is the official close of summer. Most folks close up their pools after one last hooray with the family.  Although, it will still be hot for a bit longer. Most of the kids here have also gone back to school and are just getting into the swing of things. And, of course, its time to reap the benefits of those long hours spent planting, weeding, and tending those back yard gardens.  Summer veggies are in – some of you may have bumper crops of corn or tomatoes or other fresh veggies to share or put up for the winter {or both}. What’s on the menu?

These sugar snaps are my {recently-discovered} favorite summer side dish.  I’ve always enjoyed them raw but finally got my family to join me in enjoying them when I cooked them this way. The sugar snaps still retain a crispness but they are so addictive with the garlicy flavor that sauteing them this way gives them. {Bonus points that this dish only takes 10 minutes to prepare! }

If I don’t have fresh sugar snaps I really like to buy the Marketside prewashed ones at Walmart. They are affordable and delicious – I’ve never gotten a bad or tough batch {that I have when buying them elsewhere}.
