  1. What kind of enchilada sauce and tortillas do you get that aren’t full of bad stuff? I try to read the ingredients and usually end up just picking what seems the least questionable, but have never found a really good option in the stores here. Thanks!

      I know what you mean!
      I actually either make my tortillas or purchase them at Whole Foods. They have a store brand for about $1.99 that are FANTASTIC and only call for kitchen ingredients on the simple ingredient list – flour, salt, baking powder, etc.

    I made a very similar thing just this weekend, but I did a couple things differently that might interest you. I got a huge piece of organic pork from a farmer and made a whole mess of pulled pork. I portioned it in freezer bags and froze it and then used 2 bags it to make a pulled pork enchilada casserole. I also mixed my beans and corn together with Greek yogurt instead of cheese and I did a leftover rice layer.

  3. Hi! I bought a roasted chicken and had pinto beans made at home from the week. I then bought sour cream and organic tortilla chips instead of tortillas. I didn’t have enchilada sauce so I just looked it up online and homemade it myself. Turned out wonderful!!! Thank you Denise for this recipe!
