Menu Plan Monday 2.21.11

It has been a great week so far!  I had a wonderful weekend visiting with my brother and his wife and we celebrated her birthday!  We ended our weekend together with a big family meal at Carabas (one of my favorite places to eat out).

I began the work week with a mad dash through thte house cleaning up and tackling the large heap of laundry that is taking over my laundry room.  I’ve also managed to squeeze in a little fun including a bike ride, a nature walk, an art project, and a little science experiment with my Judah bug.  (:

Menu Plan 2.13.12

Its been another “manic Monday.” I’ve been busily cleaning up the war zone house, doing a fun toddler painting project with Judah bug, and just got back from a meeting I didn’t know I had until this afternoon. It has been a whirlwind. Looking forward to one more relaxing day with my two kiddos before heading back to work on Wednesday.

We’ve got some more fun planned… the circus is in town! We’re off for some family fun at the Ringling Bros Circus in Atlanta on Thursday night!

Menu Plan Monday 2.6.12

We had a (much needed) relaxing family weekend this weekend.  Out for pizza at a local favorite, visited a good friend in the hospital who is making progress (albeit slow), and a trip to Michael’s craft store (I love that place!).  Got the last few things for Judah’s birthday at Michael’s and placed an order online for a few things as well.  (I am shopping online more and more these days – is it due to having two small children? Maybe.)

I also started my taxes and it doesn’t look as bad as I first thought.  So that was good news!  Now to spend a little time on this pitiful blog that has been so neglected and tackle that MOUND (or should I call it Mt. Everest) of laundry!  Wish me luck!

Here’s what is for dinner at our house this week.  This week we’re cleaning out the fridge, pantry and freezer.  We’ve been trying to buy very little at the store the last few weeks and use up what is already on hand.  That means I’ve been purchasing some fresh fruit for Judah bug and replacing dairy as we run out, but that is really about it besides a few odds and ends to round out meals here and there.

Menu Plan Monday 1.30.12

Work has kicked my butt lately.  Between putting in long days at the school and supervision of my student teachers ramping up the last few weeks I feel like I can barely keep my head above water.  I can see a light at the end of the tunnel though.  Things should settle down by the middle of March, if not sooner.  I have a few recipes I am dying to share with you this week, so stay tuned!

Menu Plan 1.23.12

Another day another dollar… I’m still finding my groove if you’ve been missing my {frequent} posts.  I’ve slowed down on my blogging a bit while I figure out how to coordinate everything.  Between my two part time jobs, two kids, and keeping the house from falling down and the laundry pile from growing taller than me, I just haven’t figured out how to stay awake long enough to get my posts on the interwebs. (:

I’ve got lots of ideas and I think I have a plan in place this week for getting few typed up… so stay tuned.

Menu Plan Monday 1.16.12

An other week is underway.  This one is a busy one!  I have three days of work at the elementary school and a day of observations and meeting with my student teachers.  That leaves one day – today to get this house in order and spend a little special time with my littles.  I am tired just thinking about it!  But, our meal plan is made and there are several quick meals planned so there will be dinner!

Menu Plan 1.9.12

Well, my first week back to work is under my belt.  It is taking some adjusting.  I’m more than exhausted after working away from home and still trying to maintain the blog and my household duties.  It is do-able, I just have to find my rhythm.

This is when having a meal plan is a life saver and an absolute must!  I just don’t have time to think about it in the morning or worse, at 5 pm! Being organized helps me put a wholesome meal on the table even when the days get hectic!

Menu Plan 1.2.12

It’s been a great week!  I had a long, lazy weekend with the hubby and kiddos that included a relaxing “date day” with my husband thanks to my mom and dad keeping the kiddos.  We got to see a movie AND get dinner out together – it has been AGES since we’ve done that!

Now the rest of my week will include one more day with my kiddos before heading back to work – you know, my “real job.”  (: I’ve had a nice, long maternity leave and on Wednesday it all comes to an end.  I will miss being home with my littles 24/7 but at least I only work part time so I will still get to be home with them 4 or 5 days a week.

It’s going to get hectic for a month or two while I juggle my job at the school, observing student teachers for the college, and being a mommy.  But I’ve got high hopes that I can make it work with a little organization – so expect to continue seeing posts here. (:

Menu Plan 12.26.11

I had a fabulous week. I played and did winter art projects with my son the first part of the week.  Then, we took a quick trip to Myrtle Beach and Savannah over the weekend.  I’m actually gone until tomorrow!  It has been very relaxing and I’m enjoying seeing the beach and spending some relaxing, quality time with my family!  When we get back in town it will be my last week at home full time with my kiddos. :(

Next week I will be going back to my job part time…maternity leave must come to an end.  I will miss my little ones, but at least I’ll only be gone a few days a week and I know they are in good hands {my dad watches them when I’m at work}.  So, I’m going to relish every last moment I have with them and stock my freezer with some quick grab and go breakfasts for next week!

Family Breakfast

My family has a tradition of making a big weekend breakfast.  Some weekends we eat breakfast with my mom and dad and on other weekends my brother and sister-in-law might be down for a visit.  And, still other weekends we might have the luxury of having my mother in law and father in law in town.  I love nothing better than to fix a bounty of breakfast foods.  It makes my heart sing when I know my family leaves my home with full bellies.

Some of my favorite things to fix are crepes, waffles, and pancakes.  They are filling, you can make them a thousand different ways and they are easy to feed a crowd.  Besides that, each guest can have them exactly the way they like them when you offer a variety of toppings or add-ins.  And, of course, they are a hit with the littles – my son LOVES waffles, crepes, and pancakes!

Recently, I had the opportunity to review a new cookbook all about these delicious breakfast foods entitled, Waffles, Crepes, and Pancakes with Delicious Toppings and Fillings by Norma Miller (Skyhorse Publishing, Nov 2011). But all the recipes in this book aren’t just for breakfast – sweet and savory are both covered here, proving that your favorite breakfast foods can be eaten at any time of day with any meal (Think Beer Batter Pancakes with Steak or Waffles with Melon, Pomegranate, and Mint) or even as a snack!

My personal favorite recipe from the book is Vanilla Waffles with Raspberries and Hazelnut Cream and the author has been gracious enough to share this recipe with you via my blog!

:: Vanilla Waffles with Raspberries and Hazelnut Cream

Topping
12 oz raspberries, thawed if frozen
2 oz toasted hazelnuts
1 1/4 cups heavy cream
a drop of vanilla extract

Waffles
1 cup all purpose flour
1 tsp baking powder
pinch of salt
3 Tbsp sugar
2 medium eggs
2 Tbsp melted butter
a few drops of vanilla extract
1 1/4 cups of milk

If fresh, remove any stalks from the raspberries and chill. Finely chop the hazelnuts and lightly whip the cream. Stir half of the chopped nuts into the cream with the drop of vanilla extract and chill. Reserve the remaining nuts for decoration.

Sift the flour, baking powder and salt into a bowl and stir in the sugar. Make a well in the center, break in the eggs and pour in the melted butter and a few drops of vanilla extract. With a whisk, gently stir the flour mixture into the eggs, gradually adding enough of the milk to make a smooth batter the consistency of heavy cream.

Preheat the waffle maker to medium heat.

When at temperature, open the machine and pour a small ladleful of batter into the compartments, taking care not to overfill.

close the machine and cook for 4 to 6 minutes until golden brown. Keep warm.

Cook the remaining batter. Serve warm waffles topped with a spoonful of hazelnut cream, a few raspberries, and a sprinkling of chopped nuts.
