Wolfgang Puck’s Pasta Sauce – Review

You know that when it comes to feeding my family I like to cook it from scratch.  I buy very little food that would be considered processed.  I don’t make my own cheese, crackers, and I still buy canned tomatoes and beans.  I like to cook beans from dried and I have canned tomatoes from the garden with my mom, and I KNOW HOW to make crackers from scratch but time isn’t always on my side.  I work away from home, and I like to make time to just play with my children.

That is not to say that I don’t try to choose wisely when I do purchase pre-made items.  I buy organic cheese, canned tomatoes, and beans when I can (when they are available).  I try to cook extra and freeze items or can them so I’ll have things on a busy night when I just don’t have time to start at square one – you know the nights I’m talking about – you’re late getting home from work, maybe the kids have ball practice or a game, there’s scouts or dance class and everyone has to be in a different place a a different time and the drive thru or the local pizza delivery is calling your name.

I recently had the opportunity to try a product from Wolfgang Puck that I am happy to add to my quick go-to meal line up.  Its their 100% all natural sauces.  Since I tried their soups a while back and thought they were fantastic I didn’t hesitate to try these.  I am a stickler when it comes to canned products because they usually are lack luster but Wolfgang Puck’s soups were so good they were a rival to homemade.  The sauces are no different.

They come in four flavors: Tomato Basil, Arrabbiata, Creamy Vodka, and Four Cheese.  Fabulous over pasta for a quick weeknight meal, or I really liked using the tomato basil for the sauce on my homemade pizza using my own pizza dough.  In fact we had it for dinner just this week!  If you are looking for a sauce that will taste like homemade this is the one you should try!  It was a sure fire winner at my house.

Lifeway Food’s ProBugs Review

Have you tried Lifeway Food’s ProBugs?  Lifeway Food’s kid friendly version of their organic Kefir, is a great way for kids have a healthy & nutritious smoothie-type drink on-the-go.

The texture is like that of several other squeezable yogurt brands but the benefits are greater:  ProBugs is rich in “friendly bugs” and “probiotics” that help increase the level of good bacteria in children’s digestive systems and promotes overall healthy digestion.

Lifeway Probugs is made with organic whole milk kefir.  It’s not only high in protein and calcium, it has added Inulin for optimum calcium absorption. Plus, it has seven to ten billion CFU’s of 10 live and active cultures (friendly bacteria) per cup.

Celebrating New Year’s with R.W. Knudsen’s Celebratory Beverages – A Give Away!

Yesterday I talked a little bit about what my family would be EATING for New Years – lots of easy, yummy appetizers.  But, I didn’t tell you what we will be DRINKING!

Udi’s Gluten Free Foods – Something for Everyone

I recently had an opportunity to try several of Udi’s Gluten Free Foods, including, muffins, bagels, bread, and pizza crust.  I am very blessed in that neither I or any of my family members has a gluten allergy.  However, I was interested in trying some of their items because gluten allergies are so common and many people are opting to go gluten free – by choice.

If you aren’t familiar with what gluten is, it is a protein found in wheat, barley and rye that some people cannot tolerate – some reactions are more severe than others, but it is estimated that 1 in every 200 people is sensitive to gluten.

Udi’s Gluten Free breads and sweets are great to pick up if you’re having a friend over who must eat gluten-free because everyone can enjoy them and no one feels singled out.  My family, for instance, who do not have gluten allergies, actually enjoyed the soft white bread and the chocolate chip cookies!  The bread had a great texture (that is important to me since I am a bread snob!  Most store brands seem too soft for my liking and have a glue-like texture) and made delicious paninis and toast for breakfast.  I expected to be able to tell a big difference in the taste and texture of this bread.  I have heard tales, as I am sure you have, that gluten free foods are tasteless or taste bad.  This was definitely not the case with several of the products we sampled.  The chocolate chip cookies didn’t last long at all!  They were gone less than 24 hours after they arrived at our house.

New Year’s Noshing

New Year’s Eve is creeping up on us and for many of us that means entertaining.  Some of you may be hosting the party while others will be bringing a dish to contribute.  This year we’ll actually be spending the evening with family…relaxing.  But, that doesn’t mean we won’t be eating our share of party food! (:

I love appetizers, and if it weren’t detrimental to my waist line I would eat appetizers for dinner a lot more often!  There are so many great recipes to choose from.  I have a lots of yummy go-to dishes.  This year I’ll be making some simple appetizers from scratch and I’ll be serving some prepared dishes as well!

Teasplashing – A Fun, Healthy Treat for Your Kiddos this Season

I am a southern gal, born and raised and as much as I tried to fight it, my son at only 2 1/2 LOVES sweet tea.  Don’t get the wrong idea here, I knew one day I would share my sweet tea with him.  I was just hoping he’d be a little older before becoming addicted to the sweet nectar we call “tea.”  To us southerners it needs no other name – we don’t call it “sweet tea” its just tea.

During the day Judah asks for chocolate milk, “white” milk, and juice.  But, at night time, with dinner, I almost don’t have to ask what he would like to drink because 100% of the time he says tea.  Its probably because its what everyone else is having and to him it is just part of dinner.  I make mine with sugar and decaffeinated tea bags.  So, I guess it could be worse.  We stay clear from restaurant sweet tea – especially at fast food restaurants because it is usually made with high fructose corn syrup.  And, at least it doesn’t jack him up on caffeine.

So, when Tetley asked me if I was interested in sharing this idea of “teasplashing” I was intrigued.  The idea is to add a little fruit juice (instead of sugar) to a cup of decaffeinated black or green tea.  Its a healthy treat {especially heated} for the kids and adults will love it too!

A healthier alternative to hot cocoa and hot apple cider, these recipes combine either green or black decaffeinated Tetley Tea with 100% juices – apple, blueberry and pomegranate. Or modify with your kids’ favorite juices.

1 Tetley Decaffeinated Green Tea bag
4 oz. of boiling water
4 oz. 100% apple juice
Place the tag bag in an 8 oz. cup. Add boiling water and allow tea to steep for 3 minutes. Remove tea bag and add juice. Makes one 8 oz. serving.

:: Black & Blue Pom Pom Tea

1 Tetley Decaffeinated Black Tea bag
4 oz. of boiling water
2 oz. Blueberry juice

750 Best Appetizers – A Review

It’s party time!  With the holidays here I’m sure you will be having some expected (or unexpected!) guests.  And, in just a few short weeks we’ll be celebrating a new year!  Party foods abound this time of year (my favorite thing about this time of year!).

I love small bites.  Appetizers are my favorite foods.  I think it is because you can try a little of a lot of different foods.  Also, since they are small bites they tend to be packed with big flavor.  Do you have a favorite go to appetizer.  I know I do.  I have about 8 to 10 items that I tend to go for because I know my guests will like them – they have in the past.

But, I’m always on the lookout for new and interesting apps to add to my repetoire.  That’s why I was so excited to review this cook book, 750 Best Appetizers – I mean really, 750!  Who wouldn’t love that!?

I was not disappointed!  The book has a selection to suit every possible occasion—from a dress-down backyard barbecue to the most elegant sit-down dinner. They’ve also considered the need to satisfy a variety of dietary preferences, from strictest vegans to wide-ranging omnivores.

I love how the book is structured because 750 is a lot of recipes!  It’s easy to find just what you are looking for.

Typically, when I am serving heavy appetizers at a party {in other words, in place of a meal} I will serve something cold, something hot/cooked, a dip, savory, and sweet.   With this book I can go straight to what I want to find.  There are 16 chapters built around specific types of dishes, such as Dips and Spreads, or specific ingredients, such as Fish and Seafood or Cheese. We’ve also categorized by presentation, since it’s an integral component to appetizers, so you’ll find chapters like Wraps and Rolls.  And, there is even a chapter on appetizers you can make in your slow cooker!

Some of the appetizers I have earmarked to try at my next parties are Avocado Cream Cheese Dip, Chicken Yakitori, and Sweet Pea and Potato Croquettes.  {With Hanukkah upon us, these croquettes would be a great new take on latkes!}

G.H. Cretors Popcorn – A Highly Addictive {But Suprisingly Wholesome} Snack Food

I’m sitting on my couch sabotaging my workout.  I’m eating the most delicious (and addictive) snack there is – popcorn.  Not just any popcorn… caramel corn AND cheese popcorn – mixed.  I know it sounds strange but if you’ve never tried it you MUST.  I was a skeptic and now I’m sitting here trying to tell myself to drop. the. popcorn.  My hand isn’t cooperating.  I can’t stop eating this snack straight from the heavens!  Ok, so are you dying to find out what kind of popcorn this is?  It is G.H. Cretors – the trailblazers of popcorn!

G.H. Cretors, with a history in popcorn dating back to 1885, when Great Grandpa Cretors invented the popcorn machine, just launched its new lines of popped corn.

These delectably savory snacks are ideal for simple, gourmet holiday entertaining. The five flavors include: Chicago Mix (cheese and caramel corn combined!), Just the Cheese Corn, Just the Carmel Corn, Kettle Corn and Caramel Nut Crunch. Each are made using a special, “mushroom” variety popping corn, contain only all-natural ingredients, are free of GMOs and certified Kosher.

There is no need to add any artificial colors or flavors to make it taste good. It does that all on its own.  Artificial colors, flavors, and preservatives just get in the way of the wonderful flavors of freshly popped popcorn.

G.H. Cretors has also chosen to use brown rice syrup (instead of corn syrup).  Besides the fact that brown rice syrup has a wonderful crisp sweetness, unlike refined sugars it has a low glycemic value. Family Breakfast

My family has a tradition of making a big weekend breakfast.  Some weekends we eat breakfast with my mom and dad and on other weekends my brother and sister-in-law might be down for a visit.  And, still other weekends we might have the luxury of having my mother in law and father in law in town.  I love nothing better than to fix a bounty of breakfast foods.  It makes my heart sing when I know my family leaves my home with full bellies.

Some of my favorite things to fix are crepes, waffles, and pancakes.  They are filling, you can make them a thousand different ways and they are easy to feed a crowd.  Besides that, each guest can have them exactly the way they like them when you offer a variety of toppings or add-ins.  And, of course, they are a hit with the littles – my son LOVES waffles, crepes, and pancakes!

Recently, I had the opportunity to review a new cookbook all about these delicious breakfast foods entitled, Waffles, Crepes, and Pancakes with Delicious Toppings and Fillings by Norma Miller (Skyhorse Publishing, Nov 2011). But all the recipes in this book aren’t just for breakfast – sweet and savory are both covered here, proving that your favorite breakfast foods can be eaten at any time of day with any meal (Think Beer Batter Pancakes with Steak or Waffles with Melon, Pomegranate, and Mint) or even as a snack!

My personal favorite recipe from the book is Vanilla Waffles with Raspberries and Hazelnut Cream and the author has been gracious enough to share this recipe with you via my blog!

:: Vanilla Waffles with Raspberries and Hazelnut Cream

Topping
12 oz raspberries, thawed if frozen
2 oz toasted hazelnuts
1 1/4 cups heavy cream
a drop of vanilla extract

Waffles
1 cup all purpose flour
1 tsp baking powder
pinch of salt
3 Tbsp sugar
2 medium eggs
2 Tbsp melted butter
a few drops of vanilla extract
1 1/4 cups of milk

If fresh, remove any stalks from the raspberries and chill. Finely chop the hazelnuts and lightly whip the cream. Stir half of the chopped nuts into the cream with the drop of vanilla extract and chill. Reserve the remaining nuts for decoration.

Sift the flour, baking powder and salt into a bowl and stir in the sugar. Make a well in the center, break in the eggs and pour in the melted butter and a few drops of vanilla extract. With a whisk, gently stir the flour mixture into the eggs, gradually adding enough of the milk to make a smooth batter the consistency of heavy cream.

Preheat the waffle maker to medium heat.

When at temperature, open the machine and pour a small ladleful of batter into the compartments, taking care not to overfill.

close the machine and cook for 4 to 6 minutes until golden brown. Keep warm.

Cook the remaining batter. Serve warm waffles topped with a spoonful of hazelnut cream, a few raspberries, and a sprinkling of chopped nuts.
