Hey friends! I had the pleasure of reviewing a great ADA cookbook , The Stress Free Diabetes Kitchen, by Barbara Seelig-Brown. I whipped up this tasty recipe for Tuscan-Style White Bean Soup that is not only good for those who are diabetic, but its delicious for the whole family.  Besides being delicious is gets 5 gold stars because its also a meatless meal {great for meatless Monday!} and budget friendly!

The recipe gives you the option to use canned beans or dried beans – I opted for dried since I can control the amount of salt better that way.  Also, dried beans are very cheap!  By tossing the dried beans in the crock pot in the morning I was able to get a jump start on the meal for dinner.  I whipped up a batch of southern cornbread and put it in the oven while the soup simmered. No need to watch the pot, I was able to catch up on a bit of housework while this soup practically cooked itself!  I love a simple weeknight meal!
