I’ve reviewed a lot of cookbooks but Taste of Treme has been one of my favorites! Sometimes I feel like the recipes in some cookbooks are just the same ol’ recipes I already know. This is not that cookbook. It is full of Cajun dishes – so far from my southern recipes it was like visiting a new culture! Taste of Treme includes Creole and Cajun recipes from Treme – a New Orleans neighborhood that was the birthplace of jazz.
The unique thing about this book is that it is filled with information about the culture of Treme and all of New Orleans. I literally read it from cover to cover THEN I went back and flagged recipes!
This recipe for Louis’s Red Beans and Rice will give you a taste of what you’ll find in the book. This was the first recipe I made from the cookbook for my family and it was a winner. I used to make red beans and rice from a packet (either Zataran’s or Lipton’s) and am thrilled that I can now make it from scratch!
:: Louis’s Red Beans and Rice
1 lb. of dried red beans
10 cups of water
1 ham bone or ham hock
2 cups holy Trinity Wit da Pope (onion, bell pepper, celery, and garlic)
1 cup chopped green onions
2 bay leaves
1 tsp Worcestershire sauce
2 Tbsp of Creole Spice (there is a recipe to make your own in the book!)
1 tsp crushed red pepper
1 lb. smoked sausage, cut into 1 inch pieces
4 cups hot cooked white rice
Louisiana-style hot sauce
Soak the beans at room temperature overnight in enough water to cover them. The next day, drain and rinse the beans.
In a large pot, combine the soaked beans, water, ham bone or hock, Holy Trinity Wit da Pope, green onions, bay leaves, Worcestershire, Creole Spice, and crushed red pepper. Bring the mixture to a boil over high heat, then reduce the het to medium-low so that the mixture is simmering, Cook very slowly, partially covered, for 1 1/2 hours, stirring once about every 30 minutes. Add the smoked sausage and cook, partially covered, for about 1 hour longer. the beans are ready to serve when a rich natural “gravy” is formed. Serve over rice, and add hot sauce to taste to each serving.
