With summers end very near I am thinking about all the delicious yellow squash I will be missing! If you get an opportunity to snag some of those delicious yellow squash before they are all gone you’ll have to try this recipe. It is a family favorite of ours.
Squash Casserole
3 cups of cooked squash
2 cups of crushed crackers (any type will do – soda crackers, ritz)
1 cup of grated cheese
3/4 stick of melted butter
3 eggs
1 cup of onion, chopped
1 cup milk
salt and pepper
Preheat oven to 400 degrees. Mix all the ingredients in a bowl and then pour them into a greased casserole dish. Bake for 40 minutes.

That looks so good! I’m always looking for new things to do with squash. When you say “cooked squash”, just wondering how did you cook it?
I boil the squash in water. When it is cooked through (it is soft) I strain any remaining water off through a strainer. That is it!

Yum .. sounds just like one we make .. love some squash casserole. I’ve never precooked mine .. does that just make it turn to mush once it’s been baked for 40 minutes? Just curious how long you pre-cook your squash?
