Squash Casserole

With summers end very near I am thinking about all the delicious yellow squash I will be missing!  If you get an opportunity to snag some of those delicious yellow squash before they are all gone you’ll have to try this recipe.  It is a family favorite of ours.

Squash Casserole

3 cups of cooked squash
2 cups of crushed crackers (any type will do – soda crackers, ritz)
1 cup of grated cheese
3/4 stick of melted butter
3 eggs
1 cup of onion, chopped
1 cup milk
salt and pepper

Preheat oven to 400 degrees. Mix all the ingredients in a bowl and then pour them into a greased casserole dish. Bake for 40 minutes.

Thanks for this post. I was just thinking this morning to find my copy of this recipe. I think I know what I will be making in the next few days.

That looks so good! I’m always looking for new things to do with squash. When you say “cooked squash”, just wondering how did you cook it?

I boil the squash in water. When it is cooked through (it is soft) I strain any remaining water off through a strainer. That is it!

YUM! Thanks for sharing! I’m wondering if you have any good crock-pot meal suggestions? Many that I find are drenched in sugary sauces and I’d love to get your thoughts on some healthier alternatives :)

Yum .. sounds just like one we make .. love some squash casserole. I’ve never precooked mine .. does that just make it turn to mush once it’s been baked for 40 minutes? Just curious how long you pre-cook your squash?

AUGH! I’m so glad I finally found this. I’d seen it a few days ago and planned to have it tonight and then couldn’t find where the heck I’d seen it! YAY. Thanks for posting it :)
