Rockin’ Guac

This is the rockin’-est guac you’ve ever had.  It is a little different than the classic guacamole.  It is richer and creamier…and addictive.  I may or may not have eaten a whole bowl by myself.  I’ll never tell.

First, let me tell you about the cool herbs I used to make this rockin’ guac.  I recommend that you use fresh herbs when you are making a dip like this.  Fresh herbs do so much to liven up a dish – especially a dish like this.  The problem with fresh herbs is, unless you have your own herb garden, it is hard to keep them on hand and not let them go to waste.  I keep fresh mint on my counter from my mom’s garden in a little glass of water and it lasts a while, but eventually I toss a few unused stems in the mulch pile.  Fortunately, I didn’t pay anything for this mint and it grows like weeds in my mom’s garden.  But, I wouldn’t want to throw away herbs like this that I had payed good money for!

That is why I have loved reviewing Gourmet Garden’s herbs in tubes.  I’ve seen these little tubes in my local Walmart before and haven’t payed much attention to them.  I just wasn’t convinced that they could be very good.  But, now that I’ve had the opportunity to try them myself…I’m sold.  They are ORGANIC, last a nice long time in the fridge {up to 3 months}, and the flavor is spot on.  {And, they are gluten free!}  You really can’t beat the price either, at $3.78 each.

I used two varieties in this dish, but I’ve had fun experimenting with other like the chili pepper paste in my beef barbacoa.  They also come in other varieties like basil, chunky garlic, dill, oregano, and parsley.
