REAL food Recipe: Zesty Nacho Taco Salad

Cinco de Mayo is a week from today. Are you celebrating?  Will you make a “themed dinner” on that night for your family?  Without much work at all you can get in on the festivities with this simple recipe of mine. It is a family favorite and one of my personal favorites.  The recipe has been around – I’ve seen others write about it but here’s a major difference between “theirs” and mine: mine uses REAL food – no processed salad dressing, and I swap my chips for a lesser known name brand that has better attributes than the typical recommendation for this taco salad. I love it when I can figure out how to make what was a family favorite loaded with processed ingredients into a similar {and sometimes exact or better} recipe with REAL food ingredients.  We all love the recipes we grew up with but unfortunately many of those recipes relied on processed food ingredients that were new and vogue at the time.  Now we know these “foods” aren’t really foods at all and there is movement to eat closer to the earth.  The good news is REAL food tastes GOOD! So, it is no surprise that this recipe with a few tweaks turned out just as good as I remembered.

Just in time for Cinco de Mayo celebrations here’s my recipe for Zesty Nacho Taco Salad. And the great news is, none of the ingredients are exotic or expensive.  You’ll likely have many of the ingredients in your pantry or fridge already and what you might still need you can easily find at your local Walmart. You can use any GMO free nacho corn chips, however, I’m very happy with Late July’s sweet potato chips for a mild flavor or their Red Hot Mojo for a spicier flavor. Or, you can be like me and mix them up. :)
