Real Food Fast: Skillet Lasagna

Nearly every mama has made Hamburger Helper at some point in her life. I made it as a teenager, for our family, when my mom was busy and getting home late.  Ahhh, hamburger helper.  Its easy. Its fast. Its full of yucky ingredients you can’t read.  But have no fear, I have come bearing terrific news! You can make dishes just like hamburger helper – only better – without the box, in the same amount of time.  All you need is a pound of ground beef {preferrably grass -fed}, ONE pan, a couple of REAL food ingredients which I shall reveal, and viola! Dinner is done in minutes and all the children will wear big, saucy grins.

I like fast and easy. If you’ve been reading this blog for any time at all you probably know that about me already.  Even though we have a pretty slow pace of life compared to many of my friends with children in lots of sports and extra-curriculars, there are still evenings when I just don’t feel like making a big production of dinner.  But, unfortunately my family wants to eat every. single. night.  I don’t see that changing any time soon, so I need a few fast and easy meals I can prepare NEARLY blind-folded with one hand tied behind my back. Or holding a baby. Or pouring another drink for those thirsty kids of mine.

I figure you’re a lot like me. You like fast and easy too. So, I thought I’d share some of my tricks and favorite recipes with you…like this one.

Trouble shoot: If your pasta sauce thickens but your pasta isn’t done just add a bit of water {about a half a cup at a time} and cook some more until the sauce thickens back up. Continue in this manner until the past is done to your liking.

  2. Thank you for this and your other simple recipes. I made this tonight, added peppers owns spinach, it was really good! And best of all the kids ate it and didnt even notice the spinach! I love your Website and hope to try more soon!

  3. This looks great! We are a mostly veg-meal family. I usually make my lasagna meatless, using chopped up veggies and/or greens instead. Do you think this recipe would work using veggies?

    I found this on pinterest and made it for dinner tonight. It was delicious! I added some spinach and fresh parsley and used bow tie pasta. When it came to the pasta, I was nervous that it would not get done all the way through before the sauce began to burn (learned lesson from hamburger helper) so I cooked it halfway in a separate pan, drained it, and then added it to the skillet. I also only used 1 cup of water in the recipe instead of 2. I will definitely be making this again!
