Salmon Burgers and Sliders

Salmon is loaded with omega 3′s – a healthy fat most of us don’t get enough of.  My family has been making an effort to eat healthy fats and more fish in general.  But, I’ll just tell you – salmon was not my favorite.  Being a gal who has grown up on white fish and mostly very mild flavored tilapia, salmon was a bit more fishy tasting to me.  I had tried cooking salmon filets and had experimented with different marinades but each time while my husband liked it,  it was just tolerable to me.

Then, I found Wild Planet’s sustainably caught  wild Alaska pink salmon.  Wild Planet’s salmon is 100% sustainable and has been since 2004.  This canned salmon is so good…especially in my Salmon Burger recipe.  If you aren’t sure if you like salmon just yet, but you know it is good for you, I strongly suggest you try my recipe!  Even my two kiddos love them, especially when I make them small for “salmon sliders.”

Bath Time – Time to Relax or More Work for Mom?

What does bath time look like at your house?  At my house it is like herding two cats into the tub!  It can be exhausting getting them into the tub {they would much rather just run around the house naked – in preparation for the bath} but once they’re in it is a moment of peace while they are contained!

My kids love to play with empty cups and washcloths more than any other toys in the tub!  It really doesn’t take much to entertain kids!  And, Judah BEGS for more play time every night.  It gives me a chance to just sit and play and RELAX if only for a moment.

Of course, I do have to scrub them up while they are there and it is fun watching Eliana mimic what I do as she tries to wash her on hair and feet. :)   I like to use fragrance free products and with Johnson and Johnson there is something for everyone.  Everybody has their own opinion and memories about Johnson and Johnson and their own favorite product.  Me, I like the Aveeno products best of them all.

A Big Boy Bike

The weather is finally warming up and it is perfect for getting outside and playing with the kids.  Judah has been asking for a bike to ride for a while and we’ve been dragging our feet because we just didn’t have the cash to plunk down on a new bike.  But, with the weather warming up we knew it was about time we find a suitable bike for him to ride.  I started searching around looking for one that he could maneuver {Judah had a little hand me down bike that was just too heavy and would frustrate him when we’d get out to practice}.  We were thrilled to find several little toddler bikes that would fit in our price range at Walmart.  I pulled several down to try out and finally settled on this 12 inch Huffy for just $39.97.  It is nice and light and has lots of cool stars along with a red, silver, and blue motif.

Along with the bike, we picked up some safety gear that Judah would need to ride his new bike.  May is National Bike month, so what better time than now to check your kids’ bike safety gear before they head out this summer.  Make sure everyone has what they need, in the right sizes to get out and ride this summer.

I found this super cool dinosaur helmet for my dino-loving 4 year old. ;)   It’s a Raskull’s helmet – also from Walmart and reasonably priced at $19.97. Judah LOVES it and wore it around the house for a while on the first day I brought it home. ;)   I also found him some blue elbow & knee pads along with gloves on clearance for $9.96 – they also have dinosaurs on them!  I knew Judah would be thrilled since he asked for a dinosaur bike. ;)

While I couldn’t deliver on the dinosaur bike, Judah was thrilled with his ensemble and we had a blast getting out on it for the first time today.  Judah was so proud of himself when he finally figured out how to keep it going.  With a little more practice he’ll be flying on around on it.   I’m happy with our purchase and I’ve already recouped the price in smiles from my little. This is so much fun!

Homemade Cream of Mushroom Soup

Have you been trying your best to kick the processed foods out of your house?  Are you a Southerner that likes your “cream of something” soup?  I mean come on, there are about a gazillion recipes now days that call for at least one can of Campbell’s Cream of Mushroom or Cream of Chicken Soup.

Have you read the label?  Have you been avoiding it on purpose? :) Don’t go hide under your bed!  I confess!  I confess!  I was also hanging on to my beloved cream of something soups!  I had figured out how to make cream of chicken soup but cream of mushroom soup was blowing my mind!  I mean, I just knew it had to be impossible to mimic that deliciousness!

Well, I am about to show you the magic behind the curtain and you are going to be so surprised!  It is REALLY simple!  And, what is better, it only takes a couple of ingredients you probably have on hand.  Are you as excited as me!?  You can finally kick that can to the curb!  Processed foods be gone!  Real food tastes good and is good for you!

Do you remember the post I did about making Swedish meatballs a LONG time ago?  This recipe is one my mom used to make when I was a kid.  It is one of my favorite comfort food dishes.  I was so excited to remake this recipe.  It once called for a can of cream of mushroom soup…now I use my homemade version and it is EVEN BETTER!  Not only is it better tasting…it doesn’t have all those yucky fake foods in it.  REAL, Wholesome food tastes good and doesn’t have to be difficult.

Real Food Remake: Swedish Meatballs with NO canned soup

Some of my favorite meals are still the ones my mom used to make me when I was a kid.  I love southern comfort food.  Chicken pot pie, chicken casserole, hamburger steaks with mushroom soup, cubed steak, and swedish meatballs are amongst some of all time favorites.   Unfortunately, many of these dishes included “cream of something” soup as do many of the quick recipes all mom’s have in their recipe arsenal.

I will be the first to confess that I had kicked most all the processed foods but canned cream soups were still in my pantry.  I wasn’t sure how to replace them.  It seemed a daunting task and too much trouble.

But, lo and behold, I finally got the gumption to try to make my own.  And, I am so thrilled {almost giddy} that it actually turned out and it tastes JUST LIKE the canned version…if not better.

I’ve been trying to remake some of my favorite recipes using good, wholesome ingredients.  I replaced the processed foods and added REAL foods.  The results are almost always a superior tasting dish.  REAL FOOD TASTES GOOD.

I’m going to share some of my remakes here and first off is my mom’s Swedish Meatballs.

The original recipe was posted here. It called for homemade meatballs (which I will repost here) and a can of cream of mushroom soup mixed with milk.

DIY: Orange Coconut Sugar Scrub

Mother’s Day is this weekend.  Have you figured out what to get your mom yet?  I’ve got a great gift that will leave mom’s skin feeling soft and supple.  This sugar scrub smells great, feels great, and is great for you!  Made with natural ingredients you’ve probably got on hand, this will whip up in about 5 minutes.

The base of this scrub is coconut oil.  But it serves as more than just a lovely fragrance.  Many commercial brands of moisturizers and bath products contain petroleum-based ingredients that can suffocate the skin. In contrast, coconut oil provides deep and real moisture. It helps strengthen underlying tissues and helps remove excessive dead cell on the skin’s surface that makes your skin rough and flaky in texture.

It also delays wrinkles, and sagging of skin which normally become prominent with age. Coconut oil also helps in treating various skin problems including psoriasis, dermatitis, eczema and other skin infections.

Mom Needs a Break

Everybody needs a break every now and then…even mom.  Recently I was discussing with someone how I don’t ever get “me time.”  With a four year old and a 19 month old in the house someone is always needing something.  What about after everyone has been fed, bathed, and tucked in?  Everyone knows that’s when mom is laying out clothes for the next day, getting a jump on packing lunches for the next day, reading her email, or if you are me, it is when I blog.

It started to bother me that I never had any time just for me, just to read my Bible, pray, take a bath, you know ANYTHING!  So, finally it dawned on me that I had make time.  I kept saying there wasn’t any time but then when I asked God to show me where I could find a bit of time for Him and me, He did!

It occured to me that I didn’t have a set schedule for myself.  I am very organized and for the most part our whole lives live on a schedule.  I have a set time we like to eat dinner, a specific time I like to have the kids in bed by, a specific time for lunch, naps, for cleaning house, for waking up for work, for grocery shopping, for when I bake my bread for the week, and even for meal planning.  But, I didn’t have a set schedule for sleeping and waking for myself.

Often, I would stay up really late on nights when I didn’t have to be at work at the school so that I could play catch up on the blog.  Then I would wake up feeling kind of run down the next day and would linger in bed while the kids watched a cartoon or two in the bed with me.  This would go on for a couple of nights and then I would crash early the following night but still get up late.  When I had to be at work at the school I would go to bed earlier and get up earlier.

So, I decided to put myself on a schedule.  Typically my kids are in bed between 8:30 and 9.  They don’t get up until around 8 am. So, I decided to set a goal to be in bed by 10:30 each night {this is the time I try to go to bed when I have to be at work}- whether I had to be at work at the school or not.  That way I could get up at 6 or 6:30 whether I had to be at work or not.  If I don’t have to be at work that buys me at least an hour and half of “Me Time.”

I tried it for a week.  At first it was a little difficult to stop working online and just go to bed.  But, I quickly realized I was actually accomplishing more by not staying up late fighting back the sleep.  And getting up early meant I had extra time in the morning to finish up tasks if I needed too.  It has also given me more time to read.  I’ve been reading the Bible, other Christian study books, and I’ve made my way through a couple of other books on my never ending pile of research I have been wanting to get to but could never find the time.

When I get up now I cherish this time.  It feels special.  I brew myself a cup of hot tea, drizzle in a bit of local honey, and grab my reading material.  I can then greet my children with happy smiles and full attention when they wake up instead of groggy moans and hiding under the covers. ;)

I still have my moments when I stay up just a bit too late or I just can manage to get up when the alarm goes off but I just try again the next day and resolve to get back on track.

It has really made a world of difference for me.  I feel so much more refreshed.  I really encourage you to find just a moment for yourself if you haven’t already.  It doesn’t have to be long. Just make sure you find time each day for a minute to gather your thoughts and realign your day.

Blueberry Lime “Mock-a-Ritas”

Decadent Fudgy Brownies with Pistachios

My husband LOVES brownies.  It really is the way to his heart.  ;)

So, when I was approached by SincerlyNuts.com, I new right away what I would use their pistachios for!  BROWNIES.
