Orange Marmalade Muffins


These muffins are SUPER yummy!  They didn’t last long at my house…AT ALL.  As a matter of fact, I made up a double batch of these muffins so that we could send a batch to two different families we love and have a few left at our house.  I mixed them up in the evening before dinner and we had fun delivering them after dinner one weeknight. Before the night was over there were only 3 left for the next morning’s breakfast {my kiddos and husband were getting into them without my knowing!}.  My husband and I missed out on a second round for breakfast the next morning because my kiddos gobbled the last three down. So, I’d say they were a hit. :)

If you want to make these up the night before to have for a quick breakfast the next morning, I would suggest leaving off the topping and mixing it up just before serving them. I popped ours in the toaster oven just for a few minutes to warm them and then poured the glaze right over the top.  The same applies when you make them for giving- I placed the brown sugar in a separate container and brought the muffins, the brown sugar, and a 1/2 gallon of orange juice to each recipient. Then, they could mix the sugar with the juice for the topping and have plenty of juice left over for drinking with the muffins.

Of course, they are fantastic fresh out of the oven too…not that we would know anything about that. ;)

Like the cute packaging I used?  I ordered a pile of these brown takeout boxes from papermart to transport dinners and other yummy goodness to friends. I used some cute burlap ribbon from Walmart craft supply and then just a dehydrated orange. Simple and sweet. :)
