I’ve had a few request for crock pot meals … and like you, I love a good meal that you can throw in the crockpot and leave until you return home from work or errand running. There is only one thing better than a meal that cooks itself… a DELICIOUS meal that cooks itself.
A good friend of mine made this for us a few weeks ago and I loved it! I can’t wait to make it myself for my family again.
Moroccan Chicken
[From the book “Saving Dinner” by Leanne Ely]
2 (16 oz) cans garbanzo beans, drained
1 (12 oz) can diced tomatoes
1 small red bell pepper, seeded, cut into 1 inch squares
1 small red onion, chopped
1/2 cup golden raisins
2 tablespoons tomato paste
1/4 cup chicken broth
3 cloves garlic, minced
1 1/2 teaspoons ground cumin
3 boneless, skinless chicken thighs, cut into 1-inch cubes
2 tablespoons peanut butter
Mix everything but chicken and peanut butter until well combined in a Crock-Pot. Place chicken on top of the mixture. Cover and cook on low heat for 6-7 hours or until chicken is tender. Stir in the peanut butter before serving. Serves 6.
This is delicious served over brown rice!
