Last week a reader asked me why I didn’t have more meatless meals and that little nudge was all I needed to get back on track. We used to have one meatless meal each week along with fish once a week. We got out of the habit mostly because I ran out of ideas. So, that is what this post is about… I need your help!
For several months my family would have a meatless dinner once a week. Not only will choosing to have one meatless meal a week help your budget, it is also good for your health – as long as your eating lots of yummy, colorful veggies and not just bread and pasta! Heh!
So, I’ve made it a goal to add one meatless meal to my menu plan each week – AGAIN, but my meatless meals are limited. I’d love some new ideas and recipes to add to my list! Please help me out and leave a comment!
Here are some of my current meatless meals:
- Bean Burritos
- Cheese or veggie Pizza
- Pasta Alfredo
- Falafel on Pita with hummus
- Black Bean Burgers
- Spinach and Cheese Quiche
- Potato Soup
- Pot o’ beans and cornbread
- Tortellini soup
- Tortellini or Ravioli with Marinara
- Breakfast for Dinner (waffles or eggs and toast or biscuits)
- Stuffed Shells with Marinara
- Artichoke and Black Bean Nachos
