Meal Solution: Chicken Fettuccine Alfredo


This week’s meal solution is Chicken Fettuccine Alfredo! This is one of my husbands favorite dishes! We don’t have it often because it is pretty fattening.  I’ve lightened it up a little bit, but it still isn’t something you want to have every week.

Walmart has all the ingredients you need to prepare this meal:

  • Great Value Alfredo Sauce (16 oz)
  • Great Value Fettuccine (16 oz)
  • Great Value Chunk Chicken Breast Meat (12.5 oz)
  • Great Value Grated Parmesan
  • Sara Lee Garlic Bread
  • Great Value Diced Tomatoes
  • Betty Crocker Chocolate Chip Cookies

While these ingredients would whip up a quick and easy dish of pasta alfredo, I prefer to make it homemade – and it doesn’t really take that much longer!  Alfredo sauce takes about 5 minutes to whip up from scratch!

Walmart also recommends adding diced tomatoes to spice it up a bit (and sneak a veggie in) but you could use broccoli (like Domestic Diva did) or spinach.  My family prefers it with spinach.

All you need is some noodles, some chicken (raw or canned), some sort of veggie to add in (optional) and some toasty bread to dip!

First, I got out all the ingredients I would need.  Then, I started a big pot of boiling water with some salt.  I cooked my chicken from raw – I just chunked up 1 raw organic chicken breast – but you could also use precooked that is leftover or even some leftover rotisserie chicken.  I sauteed the chicken in a little olive oil and garlic.  It took about 5 to 7 minutes.  While I sauteed the chicken I microwaved some organic spinach.  I dropped the pasta in the water and started the sauce.  By the time the pasta was done the sauce was ready!  Then, all I did was add the chicken, spinach, pasta and sauce all in my pasta bowl.  Viola!  This dish was done in about 20 minutes!
