Today is the last post in this series, although it is probably not the last post you’ll see about lunchboxes!  I hope you have enjoyed this series and you’ve gotten a few good ideas and some inspiration for how you can make lunchbox meals simple and/or fun while still being packed with healthy foods.

This lunchbox is s fun way to get another serving of fruit in your kiddos: Watermelon, Strawberry, and Mint Salsa {with cinnamon pita chips}.  My kids loved this – with or without chips, in fact.  It is simple to put together and it changes it up from having a sliced apple, orange or banana in your lunchbox.  It is also a great way to hydrate yourself!  {A slice of watermelon = a glass of water!} The watermelon and mint are so refreshing this is a lunchbox item that will be wonderful in your kid’s lunchbox AND in yours!

Serve this salsa with a peanut butter and watermelon jelly sandwich!  With just these two items and a glass of milk you’ve hit all the food groups! :)
