Cook It Once, Use it Twice – Mashed Potatoes


I have been dying to write another article for this series and I am finally getting it out to you!  This series is all about making a dish and being able to remake the leftovers into one or more equally delicious dishes/meals.  Not only will you get more bang for your buck, you’ll also save some time by using something that has been premade the night before.  I love eating well and it is a definite bonus for me to save money and time!

This week’s dish: Mashed Potatoes

Mashed potatoes are one of my favorites!  Who doesn’t love homemade mashed potatoes?  IF you have leftovers (leftover mashed potatoes are a rarity at my house)  there are several things you can do with them.

  • Make shephards pie (like a chicken pot pie or a beef pot pie but topped with mashed potatoes instead of pie crust or biscuits).  Any kind of meat and veggies will do.
  • Mashed Potato Pancakes: Add an egg and a 1/4 cup of flour to about 2 cups of mashed potatoes. Pour or spoon batter into a skillet with a couple Tablespoons of vegetable oil.  Brown both sides of the potato pancake.
  • Make Mashed Potato Soup: I haven’t tried this recipe yet, but it looks delicious!

  1. My grandma used to use them to make potatoe dumplings too. I think she would make them plain or filled with leftover ham that she had frozen.
