Cauliflower Tart

This is one of my favorite summer treats. I love this as a special side dish at a bar-b-que or even as a main dish with a nice summer salad.  It is even delicious left over. Just reheat in the oven for best results.

You can use premade pie dough if you like but I love to use my own whole wheat crust.  You can find the recipe for my pie dough here {just omit the sugar} or if you’d like, I also have a recipe for black pepper whole wheat crust that is delicious in savory dishes too!

    Recipe sounds yummy! Just to clarify — the pie weights are plastic Ziploc bags just laid inside a pie crust and baked? Doesn’t the plastic melt? Or did I read that incorrectly?

      No! The pie weights are pinto beans {or any dried bean}. They will weight the crust down. I just said I store the pinto beans in a ziploc bag labeled “pie weights” when I am done with them to reuse them. – You won’t be able to cook them to eat once you’ve baked them so you might as well continue to reuse them as pie weights instead of just tossing them out.

      You place a piece of parchment paper over the top of the pie crust, weight it down with dried pinto beans, and bake.
