Moroccan Flatbread with Rockin’ Raisin Marinara

When I was faced with making a new appetizer recipe incorporating raisins I immediately thought of all the sweet foods I enjoy raisins in: cookies, pastries, pies, and charoseth.  But, I wanted something different.  My brain went to a Moroccan dish that a friend made for me once: Moroccan Chicken Stew.  I remembered this dish had golden raisins and tomatoes, along with beans and peppers, and chicken and I loved the sweet and spice together.   I thought about how to spin this dish into something more portable.  Something a guest could hold while sipping a glass of wine.  Pizza!  Everyone loves pizza, right?

Well, this is a Moroccan spin on pizza… flatbread.  Flatbread made from pita to be exact.  Instead of a traditional Italian marinara I decided to add spices that would be more “Moroccan” like cumin, mint, and raisins in place of oregano and basil.  The raisins are the real star in this dish – not only adding a powerful cancer fighting punch with it’s team up with tomatoes, but also the raisins give the sauce an element of sweetness.  The sweetness of the raisins in chorus with the smokiness of the cumin makes for a great flavor combo.

What became of this kitchen experiment was something magical.  My guinea pigs {also known as my family} gave it rave reviews.  We were all shocked at how delicious this turned out.  It really is a fine dining restaurant quality dish that you can make in your home fairly simply.

I used homemade whole wheat pita which added an hour to my prep time.  You can get the recipe here.  But you can totally use store bought flatbread or pita for this to speed up the process a bit – especially if you are preparing this appetizer for a large party.  I also used rotisserie chicken, another great time saver.  If you use store bought pita and deli rotisserie chicken, you’ll be able to whip this recipe up in 15 to 20 minutes.

Fun Fact:  California Raisins are grown in the San Joaquin Valley in California by FAMILIES.  It is a family business and many of the farms have been in the family for more than a century and knowledge is passed from generation to generation.  Doesn’t that make your feel warm and fuzzy? :)

Whole Wheat Buttermilk Biscuits

Tomorrow is National Buttermilk Biscuit Day! You know I’m a southern girl, so this is like music to my ears!  I’m happy to use any excuse for a good ol’ buttered biscuit.

But wait, don’t flip your lid just yet… I know what you’re thinking.  Buttermilk biscuits are TERRIBLE for your health.  And you have a point.  A biscuit made with white flour has no value to your health.  In fact, white flour can lead to a myriad of health problems!

So, that is why my momma and I have come up with a healthy southern biscuit.  Yep, you heard that right.  My momma, the same wonderful woman who fed me buttermilk biscuits from scratch when I was a little girl, has helped me to change this biscuit into something more healthful: Whole Wheat Buttermilk Biscuits with Coconut Oil.

Salmon Burgers and Sliders

Salmon is loaded with omega 3′s – a healthy fat most of us don’t get enough of.  My family has been making an effort to eat healthy fats and more fish in general.  But, I’ll just tell you – salmon was not my favorite.  Being a gal who has grown up on white fish and mostly very mild flavored tilapia, salmon was a bit more fishy tasting to me.  I had tried cooking salmon filets and had experimented with different marinades but each time while my husband liked it,  it was just tolerable to me.

Then, I found Wild Planet’s sustainably caught  wild Alaska pink salmon.  Wild Planet’s salmon is 100% sustainable and has been since 2004.  This canned salmon is so good…especially in my Salmon Burger recipe.  If you aren’t sure if you like salmon just yet, but you know it is good for you, I strongly suggest you try my recipe!  Even my two kiddos love them, especially when I make them small for “salmon sliders.”

Homemade Cream of Mushroom Soup

Have you been trying your best to kick the processed foods out of your house?  Are you a Southerner that likes your “cream of something” soup?  I mean come on, there are about a gazillion recipes now days that call for at least one can of Campbell’s Cream of Mushroom or Cream of Chicken Soup.

Have you read the label?  Have you been avoiding it on purpose? :) Don’t go hide under your bed!  I confess!  I confess!  I was also hanging on to my beloved cream of something soups!  I had figured out how to make cream of chicken soup but cream of mushroom soup was blowing my mind!  I mean, I just knew it had to be impossible to mimic that deliciousness!

Well, I am about to show you the magic behind the curtain and you are going to be so surprised!  It is REALLY simple!  And, what is better, it only takes a couple of ingredients you probably have on hand.  Are you as excited as me!?  You can finally kick that can to the curb!  Processed foods be gone!  Real food tastes good and is good for you!

Do you remember the post I did about making Swedish meatballs a LONG time ago?  This recipe is one my mom used to make when I was a kid.  It is one of my favorite comfort food dishes.  I was so excited to remake this recipe.  It once called for a can of cream of mushroom soup…now I use my homemade version and it is EVEN BETTER!  Not only is it better tasting…it doesn’t have all those yucky fake foods in it.  REAL, Wholesome food tastes good and doesn’t have to be difficult.

Real Food Remake: Swedish Meatballs with NO canned soup

Some of my favorite meals are still the ones my mom used to make me when I was a kid.  I love southern comfort food.  Chicken pot pie, chicken casserole, hamburger steaks with mushroom soup, cubed steak, and swedish meatballs are amongst some of all time favorites.   Unfortunately, many of these dishes included “cream of something” soup as do many of the quick recipes all mom’s have in their recipe arsenal.

I will be the first to confess that I had kicked most all the processed foods but canned cream soups were still in my pantry.  I wasn’t sure how to replace them.  It seemed a daunting task and too much trouble.

But, lo and behold, I finally got the gumption to try to make my own.  And, I am so thrilled {almost giddy} that it actually turned out and it tastes JUST LIKE the canned version…if not better.

I’ve been trying to remake some of my favorite recipes using good, wholesome ingredients.  I replaced the processed foods and added REAL foods.  The results are almost always a superior tasting dish.  REAL FOOD TASTES GOOD.

I’m going to share some of my remakes here and first off is my mom’s Swedish Meatballs.

The original recipe was posted here. It called for homemade meatballs (which I will repost here) and a can of cream of mushroom soup mixed with milk.

Melt in Your Mouth Oven Baked Tacos and Strawberry Margaritas for Cinco De Mayo

Are you celebrating Cinco De Mayo? I’ve got awinning combo for you to make your guests (or your family) for this or any fun Mexican Themed dinner night.  These oven baked tacos are SOOO good, my family would eat them once a week…EVERY week!  We all LOVE them.  Once you try these oven baked tacos you will NEVER go back.  Baking them in the oven makes them awesome.  They are melt in your mouth,make you drool, good!

Margaritas

Of course you need something to wash these tacos down!  Why not keep with the Mexican theme and serve up some Strawberry Lime Margaritas with organic strawberries from Driscoll’s?  We made them and they were delicious!  We used an artisinal {and organic!} tequila for our libation called Casa Noble Tequila.

Casa Noble Tequila is handcrafted and has the distinction of being one of the only 19 companies in Mexico to have earned a certificate from the Profepa, an organization created in Mexico in 1992 to recognize leaders in environmental conservation.

Chicken and Broccoli Rice Cups

Need a quick, one pan meal?  Trying to get the kiddos to eat their veggies?  This is a great little meal that will please even the kiddos.  Who doesn’t love broccoli and cheese?   With a little left over rotisserie chicken, this meal hits just about all the food groups!  Just add some fruit like cantaloupe, watermelon, or even some sliced tomatoes and you’ve got everything you need!

Cooking this dish in muffin cups make it fun and freezable!  You can make a big batch and freeze half for a second dinner or quick lunch.  Just place in the fridge the night before to thaw and then pop in the oven to heat through.

Homemade Strawberry Breakfast Tarts

I set out to produce a toaster pastry that would be similar to the processed ones that so many school children (and hurried adults) eat for breakfast.  But, there was one main difference I wanted to achieve…no chemicals or ingredients you can’t pronounce, only whole ingredients.

This little kitchen experiment taught me a big lesson.  If we had to MAKE all of the junk food we wanted to eat…we’d eat a lot less of it.  My family has done our best to kick processed foods but sometimes it finds its way back into our house no matter how hard I fight it.  But, that led me to thinking about how my great grandmother didn’t have that problem.  Grocery stores looked a whole lot different then.  All of these colorful boxes of “food like substances” {not real food…more like a science experiment} didn’t arrive until much later.  They promised a life what would be much easier…convenient.

I have a theory {one that can be backed up with a lot of facts} that much of our health problems come from our idleness.  Because we’ve relinquished the duty of preparing food for our families from whole ingredients to the big companies who will gladly sell you a box of their latest science experiment promising you more free time we eat a lot of CRAP and in the long run we’ve actually shortened our time on earth {through the ever growing list of diseases thanks to our food system} rather than earned that “free time.”

Cooking real food from scratch doesn’t have to take all day… or all night.  In fact, most meals I make take 30 minutes or less.  But, if you choose to make a special dessert or fancy pastry it does take time…extra time.  That’s not to say there isn’t a time for that.  Making a fancy dessert or meal that takes a little longer for a special occasion can be fun and can even be turned into family time as you allow your children to help.  But, if we MADE dessert every time we wanted it, we’d be in a lot better shape!

Okay, so with that said, these breakfast tarts are a labor of love.  And, while this novelty turned into something quite delicious, made from WHOLESOME ingredients – all ingredients you can purchase at your regular grocery store – like Walmart. Wholesome is not to be confused {or synonymous} with HEALTHY.  Healthy these are not… including two sticks of butter and some sugar.  But, I think a little butter and sugar is fine every now and then…and again, if we had to make it when we wanted it… we’d only be having it every now and then!

Rock Your Socks Off Homemade Ramen

Let me preface this recipe with this statement:  My son WILL NOT eat soup.  I could stand on my head, promise him the moon, bribe him with cold hard cash, a trip to the toy store… to no avail. He is like the character in the Dr. Seuss book who will not eat green eggs and ham…not in a box, not on a train… you get the idea.

However, HE ATE THIS SOUP.  You heard me correctly.  Without any aforementioned bribery, he at this soup. It think it may have had to do with the length of the noodles.  At first I showed him the soup and he quickly made his mind up that this was not for him.  I didn’t push the subject.  I offered him a bite of mine and showed him a long noodle from my bowl and quickly slurped it up with a very rude and messy “SLURP.”  His eyes lit up and he was sold.  He decided, maybe I’ll just have one bite of your noodles.  So, I offered him a very long one and made sure to make a big deal about how this was the “longest noddle I had ever seen!”  He ate it.  The earth stood still. No one breathed a breath. And, then Judah declared, “this is the best soup ever!  I want to have this every day!”  Did you just read that.  EVERY. DAY.

My husband had an equally enthusiastic expression about the soup, stating that this should be on the weekly rotation.  I don’t know that I’ll make this every week, but it is very good, and very easy.  So, it will be showing up as a family favorite. ;)

The secret is using store bought {extremely cheap, it will take you back to college days} ramen.  But, make sure you get this memo: THROW AWAY THE SEASONING PACKET.  You don’t need it, your’re going to make a broth that taste eleventy thousand times better.  Plus, it is full of ingredients you can’t pronounce any way – not real food.

 

 

This makes enough for about 4 people. My family devoured it all except one bowl that my husband took to work. :)

Corn Meal Waffle Grilled Cheese with Turkey Ham

Who doesn’t love a good grilled cheese?  When I am trying to find new foods to mix up our routine it is all about presentation when it comes to my children – especially Judah.  He can be really finicky but if it looks fun he’s usually all in.  So, I used the concept of waffles (which Judah LOVES) but changed my batter up a bit.  Then, I added some good cheese from grass fed cows and some of our favorite Wellshire Turkey Ham {its turkey that tastes like ham!} and it was an instant hit with everyone.  I served ‘em up for dinner with a side of hash browns but these would be good anytime of day!  Wouldn’t they make a fun lunch?
