Moroccan Flatbread with Rockin’ Raisin Marinara

When I was faced with making a new appetizer recipe incorporating raisins I immediately thought of all the sweet foods I enjoy raisins in: cookies, pastries, pies, and charoseth.  But, I wanted something different.  My brain went to a Moroccan dish that a friend made for me once: Moroccan Chicken Stew.  I remembered this dish had golden raisins and tomatoes, along with beans and peppers, and chicken and I loved the sweet and spice together.   I thought about how to spin this dish into something more portable.  Something a guest could hold while sipping a glass of wine.  Pizza!  Everyone loves pizza, right?

Well, this is a Moroccan spin on pizza… flatbread.  Flatbread made from pita to be exact.  Instead of a traditional Italian marinara I decided to add spices that would be more “Moroccan” like cumin, mint, and raisins in place of oregano and basil.  The raisins are the real star in this dish – not only adding a powerful cancer fighting punch with it’s team up with tomatoes, but also the raisins give the sauce an element of sweetness.  The sweetness of the raisins in chorus with the smokiness of the cumin makes for a great flavor combo.

What became of this kitchen experiment was something magical.  My guinea pigs {also known as my family} gave it rave reviews.  We were all shocked at how delicious this turned out.  It really is a fine dining restaurant quality dish that you can make in your home fairly simply.

I used homemade whole wheat pita which added an hour to my prep time.  You can get the recipe here.  But you can totally use store bought flatbread or pita for this to speed up the process a bit – especially if you are preparing this appetizer for a large party.  I also used rotisserie chicken, another great time saver.  If you use store bought pita and deli rotisserie chicken, you’ll be able to whip this recipe up in 15 to 20 minutes.

Easy Authentic Homemade Salsa {From Your Pantry!}

Cinco de Mayo is just around the corner.  Do you celebrate it?  Even if you don’t, I mean, who needs another excuse to eat tacos, right?! :P

My family absolutely LOVES oven baked tacos.  Once you’ve tried them BAKED, you’ll never go back!  But, you know what goes great with tacos? Salsa.

This recipe for salsa is healthy, delicious, authentic… AND can be made from ingredients you probably have on hand, most of which stay right in your pantry until you need them.  Nothing in this recipe is obscure or hard to find, making it not only great tasting but also easy and affordable.  You can get everything you need at your local Walmart or where ever you love to shop. That’s one of my favorite things about this recipe, I always have what I need on hand.  Thanks to my long time friend Brenda Eaves for sharing this recipe with me.  It has quickly become one of our favorites!

Farm Rich Mini Pizza Slices – Elavated

Have you tried Farm Rich’s Mini Pizza Slices?  My husband LOVES them.  Since I don’t buy prepackaged food very often my family thinks packaged food is for sleepovers or special nights! HA!  I was intrigued by the thought of using up these little guys in a recipe on Farm Rich’s own site – seemed like a way to elevate a simple snack with a few ingredients to make something worthy of serving at a party.  Aren’t they beautiful?

Certainly changes the feel of them altogether – from toddler sleepover party food to fancy cocktail party hors d’ oeuvres.  Don’t you think?

Hot Spinach Queso Dip

Have you got your game time menu together yet?  I have found the perfect combination. Perfect.  I love hot cheese dip – you know the old school recipe of Rotele and Velveeta.  Yep.  That one.  It is great. But, I think I’ve found a way to make it better…at least my family thinks so.  You tell me what you think.  We added a block of cream cheese {isn’t everything better with cream cheese?} and some spinach.   It is not quite as spicy this way so if you like it hot, use the Hot Rotele.  But, with the original Rotele it is addictive and you can’t ever quite get enough!  And adding spinach makes it healthy, right?  At least that’s what I tell my kids. ;)

Buffalo Chicken Egg Rolls with Avocado Ranch

I’m so excited because I LOVE hosting parties and if I could get away with it I would eat party food ALL. THE. TIME.  Seriously.  I go to restaurants and order appetizers for my meal.  I just can’t help myself when it comes to finger food.

But, when I think about football food, I think buffalo wings.  But, not just any ol’ wings… I wanted to jazz it up a bit {and save my furniture!} so I thought… why not wrap it up in something – like a little package.  Much neater.  Cleaner.  You’ll need WAY fewer napkins.

But what kind of wrapper?  Egg roll wrappers of course!  I am CRAZY for egg rolls. So, I must introduce you to our new FAVORITE finger food: Buffalo Chicken Egg Rolls.

But, the real star of this recipe is the dipping sauce: Avocado Ranch.  When I say this dip is good, I mean it is so good you are going to want to spread it on EVERYTHING.  Even my husband who won’t eat ranch or mayo {or any other condiment besides BBQ sauce for that matter} LOVED it.  As a matter of fact, after the buffalo chicken egg rolls where gone, he said he had to find something else to spread it on!

Crazy. Good.

And, crazy simple.  Here’s the step by step how to:

Grill 3 chicken breasts {I grilled my on my flat top griddle in the house} and allow to cool enough for you to handle it.  Then, shred the chicken.

Add Franks Red Hot Buffalo Wing Sauce to the shredded chicken. {Tip: add a little at a time and stir.  You can always add more -but you can’t take it away!}.

Add a good spoonful of the chicken to the middle of an egg roll wrapper.

Fold in the two side corners.

Roll the egg roll up and then seal the final end/corner by rubbing a little water on the egg roll wrapper before sealing it down.  Spray a baking sheet with olive oil.  Place the egg rolls on a baking sheet. Spray the egg rolls with a little olive oil {this will make them brown and crisp up without frying them.

Bake the egg rolls at 425 degrees for about 12 minutes.  {Watch for them to turn golden brown}.  Serve with Avocado Ranch (recipe below).

Recipe: PB&J Crepes

Last week I was “watching” Food Network.  We leave it on that channel when no one is really watching T.V. around here!  Sometimes I’m half way listening and I’ll catch a recipe that really sounds good and my ears will perk up and I’ll take note.  That is what happened on this particular day.  Giada De Laurentiis’s “Giada at Home” was on and the show was about making food for a kid’s party.  Giada made PB&J crepes.  I immediately started thinking about this match up and I LOVED it.

Why?  My kids love PB&J but PB&J on crepes would be even better than on bread because crepes are loaded up with eggs – unlike other breakfast treats like waffles and pancakes.  So, this match up is loaded with protein between the peanut butter and the eggy crepes.  Pair these babies with some fresh fruit and/or some carrot sticks and you’ve got a very healthy – kid favorite – lunch!

I decided to give them a try and they were a home run with Judah AND Eliana.  Here’s how I made them:

1. I made crepes using my recipe here.

2. I spread each crepe with a little peanut butter and then with a little jelly.  {Giada also ran some fresh blueberries down the middle of her crepes.  This would be good too, but I didn’t have any fresh berries this time of year}.

3. I folded the crepe in half, then folded in the sides a bit {like a burrito}, and then rolled it up.  Finally, I cut it in half on the bias

{I made one alteration to the directions on the crepe recipe, though.  I recently received a new ceramic coated pan from Wear Ever’s Pure Living line.  It is a safe alternative to non-stick – I WILL NOT use teflon.  If you haven’t heard the dets on why you shouldn’t be cooking with Teflon go read about it at Healthy Child, Healthy World here.  The ceramic coating is toxin-free, chemical-free, and free of PFOA, PTFE, and cadmium.  Plus, ceramic is scratch resistant, and easy to clean {dishwasher safe!}.

The WearEver Pure Living pan made making crepes fool-proof (and healthier!).  I was able to cook the crepes WITHOUT buttering the pan first!  I just poured the batter straight in, waited until the middle was set and the bottom of the crepe was browned a bit, and then flipped the crepe over and cooked it just a minute more to brown it on the second side.

I’m telling you, this pan is worth its weight in gold!  But it retails for just $24.99 – and worth every penny.  My husband used it yesterday to cook an egg and said it turned out perfect and he didn’t use any butter or oil in the pan to fry it!

Appliances for Tailgating that will Kick it Up a Notch!

Its football season and it is serious business here in Georgia.  The weather is just starting to cool off here so now it REALLY feels like football season to me.  Walmart has sent me some appliances to help out with tailgating – whether you enjoy football at the game or from your couch!

Growing up I was a cheerleader in high school and my memories of the football games included hot chocolate.  I can guarantee you that the hot chocolate I had from concessions was not anything like the delicious hot chocolate I made in my new Mr. Coffee Cafe Latte maker.  I also made a delicious “Almond Joy” cafe latte that was to die for!  Here’s how I made it:

I also had the opportunity to try out the new Crock Pot Triple Dipper. It is a really sweet appliance with three small crocks on a spinning lazy susan. You can make three dips of dishes at once – or not – you can totally use just one, two, or all three crocks at once.

My favorite dip is one my father in law taught me. It is really simple and sooo good.

Are You Ready for Some Football?

It’s GAME TIME!  Football season is upon us so what do you have planned?  Will you be tailgating?  Maybe you’ll be watching the games at home?  Walmart wants you to know they have tons of gear to help you to be prepared for the big game no matter where you’ll be watching it.  I know at my hometown Walmart all the Georgia gear is right by the door!

And, check out this tent I scored online from Walmart.com – it is s 10×10 Ozark pop up canopy.  It was super easy to put together/pop up.  It is really well made and will work great for tailgating and for other outdoor events for my family!  I am looking forward to using it a bunch this fall for entertaining as well.  There are lots of canopies on Walmart.com starting at $49.97 for a 9×9 express canopy.  This one in my photos was $99 and shipped for free!  Plus there are tons of add ons you can purchase like wind curtains, sun walls, and mesh curtains if you want them.

Besides the awesome canopy I also got some sports team themed gear in my home town team – the Georgia Bulldogs.  I got a bowl, napkins, and cups.  But, they also had plates, table cloths, and lots of gear for the game too.  I decided to purchase some Georgia Bulldog fabric from Walmart’s fabric department to use as my table topper rather than purchase a plastic themed table cloth.  I figured I could wash and reuse this so it was worth spending just a little bit more.  And, there was actually lots of licensed Georgia Bulldog fabric to choose from.

While Walmart did carry Georgia Bulldog plates to match the cups and napkins I bought, I opted to save a little money and purchase the solid black plates from their party supply aisle.  They were very reasonably priced and just right for my budget. ;)

So, on to the most important part… the food. :)   I made chili, apple dip with apples and grapes, and grilled cheese roll-ups.   My apple dip is a crowd favorite and since it only takes two ingredients, it is fabulous for tailgating.  All you need is  an 8 oz block of cream cheese and a regular/small sized jar of marshmallow cream.  Leave the cream cheese out so it will be room temperature.  Blend the two together with a mixer and viola!  Fruit dip in a jiff that will be gone in a jiffy!

Aren’t these little grilled cheese roll-ups cute as a button!?  My little tailgaters (and my big tailgaters!) loved these!  All you have to do is roll a piece of bread flat with a rolling pin.  Place a piece of sandwich sliced cheese on top and roll it up.  Place some butter on the griddle OR spread a little softned butter on the outside of the roll-up and then grill, seam side down first.  After a few minutes roll the sandwich around to get it grilled on all sides. Gooey deliciousness great alone or with a big bowl of chili.

Football Season is Here!

Football season is here and that means having snacks on hand to feed the fans!  In Georgia, while we’re rootin’ for our favorite team, there is nothing more southern than homemade pimento cheese.  To kick it up a notch, I cut the sandwiches with a football cookie cutter (It is easier to cut the bread and then add the spread).  You can use this method with whatever filling you like: cold cuts, other spreads, pb&j, etc.  You can also use this method for other events. My baby likes his sandwiches cut into choo choo trains and dinosaurs for lunch. (:

Tabasco Original Red – Buffalo Chicken Dip – done Wholesome
