Orange Cinnamon Waffles

This was my last week of maternity leave and my first week back at work. On Tuesday, my last day home, I wanted to savor every moment I had with my littles. So, to get things started, Judah and I made some special waffles. My little guy loves to help me in the kitchen and one of his favorite foods happens to be waffles.

I tweaked it a little substituting some of the self rising flour for whole wheat flour and you can’t even tell (but it is much healthier)! I’m trying to do more of this to get healthier grains in us.

:: Orange Cinnamon Waffles

1 1/2 cups all purpose flour
1/2 cups whole wheat flour
1/2 tsp baking powder
1/2 tsp ground cinnamon
pinch of salt
3 Tbsp sugar
2 eggs
2 Tbsp butter, melted
2/3 cup orange juice
2/3 cup milk

:: Orange Glaze

1 cup powdered sugar
3 Tbsp orange juice

Mix all purpose flour, wheat flour, baking powder, cinnamon, salt, and sugar together. Make a well in the center of the dry ingredients and add the eggs, butter, orange juice and milk. Stir together. The batter should be sort of thick.

Preheat your waffle maker.

Stir the sugar and juice together to make a glaze.

When the waffle is to temperature, open the machine and pour a small ladleful of batter into the compartments, taking care not to overfill. Close the waffle maker and cook until done.

Pour glaze over the waffles. Serve cut up bananas and fresh whipped cream on top.

My Whole Food Journey: Clean Eating – What is it?

I’ve been doing a little research into what my family can do to help us lose weight – healthily.  I don’t mean popping pills, drinking tonics, or jumping on board with some fad diet.  I do mean doing it the old fashion way – making a life change, exercising, and eating a wholesome, well-rounded diet.

I feel like we do a pretty good job already.  But, I took a closer look at what we were REALLY eating and I’ve found a couple of ugly culprits that we could cut out.  I also know that we all need to increase our exercise and if you saw my New Year’s post you know that we’re holding one another accountable and helping each other get that extra/much needed exercise.

I’ve been looking at Clean Eating (maybe you’ve seen the magazine?) and I’ve been reading up on what it means to “Eat Clean.”  It isn’t far from how my family eats now:

:: Fruits and vegetables (local, organic and/or fresh is best, second comes frozen, and finally canned – just make sure you aren’t buying anything with added sugar).  Whole is best – in other words choose an apple over apple juice – you’ll get the bonus of fiber and not just sugar.  You’ll feel fuller longer.

:: Eat grass fed or organic meats (lean cuts are best).  Grill, roast, and broil meats instead of frying.

:: Incorporate Whole Grains – There are all sorts of grains you can eat – just cut out the white/refined ones.  That means no white rice, pasta, and no white flour or white bread.  Read your labels.  Make sure your “whole wheat bread” is whole wheat (sometimes the second ingredients in “whole wheat bread” is white flour).

:: Trade Bad Fats for Good Ones – Cut out processed oils such as vegetable oil, vegetable shortening, peanut oil, etc. Instead get good fats from fatty fish (salmon), avocados, nuts, olive oil, coconut oil, etc.  Avoid fast food!

:: Avoid sodas and high calorie, sugary drinks. Follow the tenant of clean eating that aims to remove added sugars from the diet. Drink water and unsweetened tea.  Use wholesome sweeteners such as honey, agave, brown rice syrup, and stevia.

Clean Eating – My Way

I agree with all the above.  I didn’t say it would be easy… but I know it is, in theory, the best choices we could make.  We already eat a good assortment of veggies and fruit, whole grains, organic and grass fed meats and poultry, and we have traded in the bad fats for good ones.

We are trying to fill our plates with mostly (50% or more) COLORFUL veggies and will always make sure there is a green vegetable offered (White is not a color!).  We’re cooking our proteins using healthier methods and we try to vary it each night between chicken, fish, meatless (beans or eggs), and some red meat.  We eat pork and other seafood (besides fish) very rarely.    We are limiting our carbohydrates to one small serving at dinner – if at all (that means potatoes, rice, and pasta).

What are our stumbling blocks?

My husband’s stumbling block is soda.  He has to have them and even though I don’t buy them he manages to get his fill by stopping at the convenience store pretty often.  My stumbling block is sweet tea – what did you expect?  I’m southern!  What do these have in common?  Sugar.

Sugar is our biggest vice.  I know it is unrealistic to think we will totally cut out sugar.  So, I’ve devised a compromise to allow one soda or glass of tea at dinner ONLY and to drink water at all other times.  We will also be allowed to drink a cup of coffee in the morning if we so choose, but we’ll be experimenting with agave as the sweetener (I’ve already tried it in hot tea and it was delish!).

Our other stumbling block is refined flours and grains.  This one is a little sneakier.  I buy whole wheat bread – and yes, I read the labels.  I am a die hard fan or Rudi’s organic breads and one of the reasons I love them is because the ingredient list is short and easy to read (I mean besides the fact that they are delicious!).  The refined flours are sneaking in when I make waffles and other baked goods.  I have been buying King Arthur’s unbrommated – unbleached flour but I am just not as good about baking with whole wheat flour.  It is also sneaking in in the form of crackers, white rice, and pasta.  I’ve tried whole wheat pasta and I. DON’T. LIKE. IT.  and the same goes for brown rice.  I am learning to like brown rice a couple of ways but I still enjoy white rice.  My solution?  It is unrealistic to think I will totally kick my refined grains habit so I’ve compromised by limiting the frequency we have rice and pasta.  I am also trying to convince my hubs to eat his peanut butter with fruit rather than crackers.  And, I’m going to try harder to incorporate some wheat flour in my recipes – you know mixing it in with my regular unbleached all purpose flour.

Some proponents say you should cut alcohol because it is pure sugar (easy enough in my household – I don’t like it!).  If you enjoy it you should limit it to one small glass (there are studies that show red wine has health benefits when you drink it in moderation – as in a small glass each night or every other night).

And, some say you should allow yourself a treat so as to not feel deprived.  Be careful here!  Determine ahead of time what a “treat” will be and how often you will allow it.  I’ve decided to allow myself one treat per week and that treat will be ONE serving of something.  I don’t think you should allow yourself a whole day of falling off the wagon, or binge eating – that isn’t a treat!

Celebrating New Year’s with R.W. Knudsen’s Celebratory Beverages – A Give Away!

Upside Down Apple Pecan Pie

I love pecans but there is nothing worse than stale nuts!  Fisher has come up with a solution to stale nuts and has made cooking with them even easier with their brand new stand-up bag – the first of its kind in the baking nuts category. The innovative design features a flat, expandable bottom and a wide open top, making it much easier to scoop nuts right out of the bag and into the mixing bowl.  The Fisher Freshness Seal Bag also features  a press-to-seal closure that locks in freshness and preserves the flavor and crunch of the nuts after opening.

Now, when I buy a big bag (because it is cheaper) I don’t have to worry about the remainder going rancid before I use them in my next recipe!

Looking for a new way to try Fisher pecans?  This Thanksgiving I made a fabulous new pie … Upside Down Apple Pecan Pie.  It is a cross between deep dish apple pie and a southern favorite -pecan pie.  Can’t decide which pie to have – have ‘em both – in one pie! :)

:: Pie Crust (Make a double batch for top and bottom)

1 1/2 cups all-purpose flour
2 Tbsp sugar
1/4 tsp salt
10 Tbsp (1 1/4 sticks) of unsalted butter, chilled and cut into 1/2 -inch pieces. (I use organic and use it straight out of the fridge)
3 Tbsp of ice water

:: Pecans

1/2 cup packed brown sugar
1/4 cup butter, melted
1 cup pecan halves

:: Filling

1 cup sugar
1/3 cup all purpose flour
2 Tbsp butter, melted
1/4 tsp ground cinnamon
8 cups thinly sliced apples

Make pie crust: Combine flour, salt, and sugar in the food processor. Add chunks of butter a little at a time and pulse until it resembles crumbs. Add water in a drizzle while the food processor is running and it will form a ball in food processor. Wrap dough in plastic wrap and refrigerate for an hour.

Coat a 9 inch deep dish pie plate with cooking spray. Line the bottom and sides of the plate with parchment paper. coat paper with cooking spray.

In a small bowl, combine the ingredients for the pecans. Arrange in the bottom of the pie plate. with rounded sides of the pecans facing down.

Roll out the pie dough on a floured surface. Transfer to the bottom of the pie dish on top of the pecans and up the sides of the plate. Trim edges.

In a large bowl, combine the sugar, flour, butter, and cinnamon. Add apples; toss to coat. Fill crust. Roll out remaining pie crust and place over filling. Trim and seal edges. Cut slits in the top of the pie crust for venting.

Place the pie on a foil lined baking sheet to catch spills. Bake pie at 375 degrees F for 60 to 70 minutes. Carefully loosen the parchment paper around edge of pie, invert hot pie onto a serving plate (I needed a second person to help me with this). Remove paper. Cool for at least 15 minutes before serving.

Chicken Tortellini Alfredo Soup

It’s that weather again…soup weather.  You know what I’m talking about.  The -stay inside with your warm pajama’s on in front in the fireplace all snuggled on the couch with a big bowl of soup – kind of weather.  This soup is perfect for one of those days/nights.  Warm, filling, and delicious…comfort food at its finest.

:: Chicken Tortellini Alfredo Soup

1 chicken breast
3 Tbsp butter (preferably organic)
1 Tbsp flour
1 clove garlic minced
2 cups of half and half (preferably organic)
1 bag (14 to 16 oz) mixed vegetables (frozen – no need to thaw)
1 cup freshly grated parmesan
1 9 oz. container of fresh tortellini
32 oz. box of chicken stock
crumbled bacon for garnish (optional)

Pan fry the chicken breast in your dutch oven in a little olive oil. Remove and allow to cool so you can shred it while the rest of the soup is cooking. Add 3 Tbsp butter to the soup pot along with garlic and 1 Tbsp of flour. Allow the flour and garlic to cook for a few minutes (it should bubble but not turn brown).

In a separate pot cook tortellini as package directs but take out/drain a few minutes early (al dente) because it will continue to cook a minute in the soup.

Pour chicken stock and half and half along with veggies in the soup pot. Bring to a boil and then simmer until soup reaches the thickness you desire and veggies are cooked through.

Add shredded chicken, parmesan, and pasta. Turn the soup off and serve with warm bread such as baguette.

A New Chuggington Video Chugs in Just in Time for Gift Giving!

Trainees, start your engines! Do you have a preschooler who loves trains?  My Judah bug is train crazy!  So, when I was asked to review Chuggington’s new DVD series from Anchor Bay Entertainment, “The Chugger Championship” I knew my answer right away!  Absolutely!

Each time a package arrives at our house my son gets ecstatic and immediately asks if it is for him and the next question is, “Is it my train?”  Wishful thinking I guess, but he’s always hoping those boxes will contain a new train for him. (:

So, when “The Chugger Championship” DVD arrived he was jumping up and down and of course we had to watch it immediately!

If you aren’t familiar with Chuggington, it is an exciting show about three young trains, or “trainees” – Koko, Wilson, and Brewster that airs daily on Disney Junior, Disney Channel’s programming block designed for kids ages 2-7 and their families.

This new DVD includes six, action-packed adventures that will help your tot discover that a true champion isn’t always the one who finishes first!

If you’re looking for a great family film to add to your toddler’s stocking this year, this one will not disappoint.  Judah is already wearing our copy out!

Baby Steps – A Fab Resource for Mamas

I’ve found a great resource for moms…it is called Baby Steps and it is a new campaign on Walmart’s website.  This is a great resource for moms looking to save money and get information on feeding and changing your little one.  Whether you are an expectant mama, a new mom, or are a mom to a tot, you’re sure to find a video resource that answers your questions.

Giving Back…Locally

Its the season for giving and I had the opportunity to give back to a local charity/non-profit this week and I am excited to share the details with you!  There are so many worthy causes out there – the Salvation Army, Goodwill, Toys for Tots, food Pantries, Cooking Matters, Share our Strength, Relay for Life, the list goes on and on.  All of these nonprofits/charities would have been worthy of my time, money, energy, but I choose to pick a charity that closer to home, a local one who doesn’t have a big PR department and no media coverage.  I chose the Pregnancy Resource Center in my local community.

The Pregnancy Resource Center does many wonderful things for young women in our county – providing education, support, friendship/relationship, and products.  One of the programs they have is called “Earn While You Learn.”  This program is an opportunity for young women to learn about caring for and bonding with their babies, among other things, all while earning “mommy money” that they can spend on baby items they want.  They can choose to spend their dollars right away, or bank their dollars for larger items. Thanks to Walmart, I was able to contribute several items to this incentive program including 6 packages of wipes, two stacking toys, 3 other baby toys, two hooded towel and wash cloths sets, some pacifiers, and 3 bottles of lotion and baby wash – that’s a lot of stuff for just $50. Here’s the story:

I urge you to give back this season too – whether you give food, toys, money, or your time – just give.   And let’s make pact, a pact to give back during the rest of the year.  Let’s not wait until the end of the year to give back because that is when it is at the front of mind, and when it is easy.  Let’s give back all year long.  There are so many opportunities to give, so many worthy causes and needy people…let’s be a light to others and prefer or brother over ourselves this year.

Menu Plan Monday 12.5.11

Yes… I know….it’s called Menu Plan MONDAY….and it’s Tuesday.  I know its Tuesday although I feel like it should be more like Thursday because I think I’ve done enough work for it to be Thursday by now. (:

I am worn out and still feel like I’m a mile behind.  I’m beginning to wonder if I’ll ever really feel caught up…does anyone else feel this way?  Hello?  Human mic check, anybody out there?

Well, if you are listening, here’s what I’ve been up to: blogging in the middle of the night when everyone else here on the home front is sleeping, a meeting at the board of education, grocery shopping, menu planning, house cleaning, and cleaning, and cleaning…(do the dishes and laundry mate during the day or what?!?), snowflake stamping with Judah, making rice krispie treats with Judah, and making a video for Walmart (stay tuned!).

Things I still want to accomplish this week:  Make the Vanilla Brioche I never got to make last week, download and print some fun learning/art sheets for Judah-bug, catch up on the laundry (ha!), take Judah to story time at the library, catch up on about a dozen blog posts, observe at Berry College’s laboratory school, check out Berry College’s gym for fun/healthy things to do with the family, and do 3 student teacher final evaluations.  Wish me luck…say a prayer…I’m keeping my fingers crossed.
