Salmon Burgers and Sliders

Salmon is loaded with omega 3′s – a healthy fat most of us don’t get enough of.  My family has been making an effort to eat healthy fats and more fish in general.  But, I’ll just tell you – salmon was not my favorite.  Being a gal who has grown up on white fish and mostly very mild flavored tilapia, salmon was a bit more fishy tasting to me.  I had tried cooking salmon filets and had experimented with different marinades but each time while my husband liked it,  it was just tolerable to me.

Then, I found Wild Planet’s sustainably caught  wild Alaska pink salmon.  Wild Planet’s salmon is 100% sustainable and has been since 2004.  This canned salmon is so good…especially in my Salmon Burger recipe.  If you aren’t sure if you like salmon just yet, but you know it is good for you, I strongly suggest you try my recipe!  Even my two kiddos love them, especially when I make them small for “salmon sliders.”

Faux Fried Fish

Have you made a vow to make 2013 your healthiest year yet?  We’re doing our best around here to eat healthy and if you are looking for another healthy meal to spice up your weeknight routine, I’ve got a family favorite to share with you!

We LOVE fried fish – but fried foods aren’t “all the time” foods.  I mean, I still enjoy fried food every now and then…we just try to not to make them a routine choice.  So, out of our love for fried fish, this recipe was born.  My mom is the brainchild behind this recipe.  I must give her ALL the credit for this one.  BUT, I will gladly eat this recipe once a week and even my picky hubby requests it often!

Cod makes a great fish for this recipe because it is hearty and holds up to the breading.  But, you could easily use flounder, halibut, or other white fish in its place.

With only a couple ingredients, this meal is both figure friendly AND frugal.  Plus, with simple ingredients, you don’t have to hunt anything obscure at a specialty shop to enjoy this recipe… I got all the ingredients at my local Walmart.

Recipe: Potato Chip Encrusted Tilapia

Fish is so good for you and yet I have such difficulty finding ways to cook it that my family will like.  But one thing is certain about my picky eaters: they like junk food.  As much as I try to limit it, they beg for it.  In fact, my son tells me what a great cook I am on nights that I make simple “junk food” dinners.  LOL. So, I knew this potato chip encrusted fish would fit the bill for both of us: a little bit junky for my junk food junkies, and healthy fish for mom’s peace of mind.  It was delicious and everyone gobbled it up – even the pickiest of family members. ;)

Baked Tilapia with Fresh Blueberry and Mandarin Orange Salsa

Its summer time and here in Georgia it is HOT.  When I mean hot, I mean the other day my car said it was 113 degrees!   And, I don’t know about you, but when it gets this hot the last thing I want to do is stand over the stove for very long.

So, I’ve got just the thing… quick fish.  That’s right, fish.  It cooks up fast and with this super simple Georgia blueberry and mandarin orange salsa it is the perfect light dish for summer time.  {I like to keep it light when the temperatures begin to rise}.

Asian Salmon

My family has been trying to incorporate more fish into our weekly meal plan.  I have several varieties in my freezer and I try to cook fish at least once a week.  But, it can be a real challenge.  I am not a huge fan of fish but I know I should eat more of it.  Especially since I am breast feeding – it is really good for the baby’s brain.  Plus, it is one of the meats that Judah will actually eat (he isn’t fond of meat).  I like it fried – but that isn’t the healthiest way to prepare it!  So, I’ve been searching for new, tasty ways to prepare it.

I found a recipe for an Asian marinade and since I’ve had it prepared that way and liked it, I decided to give it a try.  I changed the recipe just a tad (leaving out an ingredient or two) and this is what I came up with:

:: Asian Salmon

4 Salmon fillets (or as much as you need for your family)
1 cup soy sauce
1/4 cup Nakano Rice Vinegar
1/4 cup freshly squeezed lemon juice
1 Tbsp fish sauce
1/2 cup sliced scallions
2 Tbsp minced garlic
2 Tbsp fresh ginger
1 1/2 cups Panko (Japanese bread crumbs)

Line your baking sheet with aluminum foil.

Combine all ingredients except the Panko in a measuring cup. Pour 1/3 of the mixture over the salmon. Sprinkle the panko over the tops of the fillets -covering them well. Pour the rest of the marinade over the panko carefully seeing the panko absorbs the marinade. If the panko slides off or if you lose a lot of marinade, spoon it over the fish so that the panko is on top of the fish and is fully soaked. Set aside for 15 minutes.

Set your oven to 500 degrees. Roast the salmon for about 18 to 20 minutes or until the fish is cooked through and is flaky (internal temperature should be 120 degrees.

Remove from oven and cover with aluminum foil. Allow the fish to rest 15 minutes. Serve and enjoy!

Parmesan Crusted Flounder

We’ve been trying to incorporate more fish dishes into our meal plan.  I have to admit that while I know that fish is very good for me, sometimes I have trouble coming up with ways to cook it where I will like it.

I recently had some fish at at restaurant that I loved and I was excited to try to duplicate it at home. The flavors were fairly simple and easy to figure out so I made it last week for my husband and Judah along with my mom and dad.  It was a hit!  DJ actually asked if this could be on our regular rotation for dinner!

I used flounder for this dish but you could use any other type of white fish that you prefer.

::  Parmesan Crusted Flounder

4 flounder filets (thawed)
1 cup panko
1 cup parmesan, fresh grated (not from a shaker!)
Homemade prepared alfredo sauce
Fresh parsley, minced

Preheat oven to 425 degrees.

Prepare some alfredo sauce and ladle a few spoon fulls into a shallow bowl. In a second bowl mix the panko, parmesan, and parsley.  {NOTE: You could use jarred alfredo, though I never do! Alfredo is so simple and quick to make and if you are going to serve the fish with pasta you’ll be making it any way and it pulls the two items together.  If you aren’t serving the fish with pasta you could dredge the fish in egg or mayo – the alfredo just gives it another layer of flavor and I prefer it).

Prepare a sheet pan with a couple tablespoons of butter and allow it to preheat for a minute or so in the oven.

Dredge the fish in the alfredo sauce and then into the panko mixture and place on sheet pan. Place the fish into the oven for approximately 15 minutes (or until fish is cooked through and flaky).

Serve with some linguine noodles tossed with the remainder of the alfredo sauce (not the sauce you dredged the fish though – it has been contaminated with raw fish!). Also tasty alongside a lovely salad and crusty piece of bread.

Fish Piccata

Fish is really healthy for you but in the past I have a had a hard time making it a regular in my weekly meal planning.  Finding new ways to fix fish has really helped me to add it to my weekly meal plan.  This is one of my favorites – and my family actually requests it! The nice thing about this recipe is you can’t screw it up! It is literally one of those recipes that you add a little of this and a little bit of that until it taste like you want it to!
