Do you eat lunch at home or “brown bag it” to work?  Packing lunch is one of the best ways to save money AND ensure you are eating healthy. If you’ve made some health goals for the New Year, you’re going to love today’s recipe!  Sometimes we can get in the same ol’ soup and sandwich rut – or worse, we start hitting the drive thru windows because we low on time and uninspired.  I’ve got a simple, healthy recipe that is FULL of flavor and will keep your lunchbox exciting!

Chicken of Sea has these awesome new Flavored SALMON pouches. Salmon is SO good for – full of Omega 3’s and healthy fat that your brain needs!  Sometimes I’ll admit that I don’t care for certain preparations of salmon.  It can be a bit more “fishy” if you are only used to white fish – like tilapia. However, these flavoured salmon pouches are high on flavor – and I don’t mean fishy! ?

So, what’s for lunch?

Barbecue Salmon Taco Cups! One Chicken of the Sea Barbecue Flavored Salmon Pouch is perfect for 2 taco cups – or one serving. If you are making this for more than just yourself, make sure to pick up a couple pouches.

Barbecue Salmon Cups

1 Chicken of the Sea Barbecue Flavored Salmon Pouch
chopped lettuce
sliced black olives
whole kernel corn
2 flour tortillas {the small/fajita size}

Preheat oven to 350 degrees. Place flour tortillas in a standard muffin cup.  You’ll need 2 per serving. Bake for 10 minutes.

Fill the cups with Chicken of the Sea the Barbecue Flavored Salmon Pouch. Top with lettuce, corn, and sliced black olives.

It really doesn’t get simpler- but you will NOT be disappointed with the flavor. And really, when you’re throwing together a lunch – SIMPLE needs to be a key word at my house. ?
